It’s almost summer in San Diego! We all know what that means- an abundance of bathing suits and margaritas! Here in San Diego, we are famous for our gorgeous weather and delicious Mexican food. Don’t let your desire to strut your stuff on the beach stop you from enjoying your favorite dishes at On the Border. We’ve got some simple steps to help you cut those unwanted calories and keep you looking your bathing suit best!

1. Substitute corn for flour tortillas. Corn tortillas have half the calories and fat when compared to flour. Making this simple switch can significantly reduce your caloric intake. If you want to cut even more calories, ditch the tortilla all together!

2. Choose grilled over fried options. Enjoying a grilled fish or chicken taco can save you 300+ calories and 25+ grams of fat! Not only will this tip keep you looking thin, but subtracting the added saturated fat from your diet will keep your heart healthy and strong.

3. Omit those fatty condiments. Though delicious, cheese and cream based sauces will add a surprising amount of unwanted calories to your meal. Asking for “light” cheese and sauce, or subtracting them completely, will save you significant calories. If this tip sounds like it may leave your food a little bland, add some avocado slices or guacamole to satisfy your craving.

4. Lighten up your margarita. One 12 ounce margarita can contain more than 500 calories! This is mainly due to the sugary sweet ‘n’ sour mix added to your cocktail. Simply ask to substitute half of the sweet ‘n’ sour mix for soda water to dramatically reduce your sugar intake. You can also order no salt or sugar on the rim to cut those calories even further.

5. Order a Corona Light. On the Border offers the skinny version on your favorite Mexican beer! With 148 calories in a Corona Extra and 99 calories in a Corona light, it is an easy switch to make without skimping on your fiesta. 99 calories in a Corona light? That’s even less than a Bud Light!

In addition to reducing your calorie intake, try standing instead of sitting at the bar or park at the far end of the parking lot to help burn those few extra calories. Next time you are at On the Border, keep these tips in mind to help maintain your slim, summer ready physique. See you at the beach!

Well… You know it; one of the biggest Mexican parties is coming in 29 days… However, are you really prepared for this huge event? OTB is here to help you get ready for it!

First step: the mental! Get the motivation!

Reminisce all of the best Cinco de Mayo memories you’ve had in the past couple of years in order to awake an amazing party impulse you will need to get excited for the whole day! (Pictures? Memories? Favorite music? Everything good!)

Second step: You need to be physically ready!

Remove all of those toxins from your body so you can start the Cinco de Mayo party with a clean slate!

Here are some options to break a sweat:

1- Work out till exhaustion…

2- Eat a lot of spicy Mexican food such as Firecracker Stuffed Jalapeños!

3- Lay out in the sun for hours (listening to music so you don’t lose your motivation!)

Once you have done that, you should be ready for the final step: get the perfect sombrero that fits you!

Now you can fully enjoy this great event!

This is the story of how Johnny the Bartender embarked on the quest to create the perfect margarita. It all started when little Johnny had his first taste of a margarita back when laws were more lenient and parents were more curious than their own children. After deducing what components were in it from the first sip, he swore that he would find the perfect ingredients to constitute the perfect margarita.

This journey started in the heart of Mexico, where the legendary Miracle Lime could be found. Deep in the ruins of the ancient temples of Nahuatl, exists a tree that bears the said fruit. Johnny had heard of this at the local bars on the outskirts of Mexico and began his quest to find this perfect lime for his dream margarita. After several days trekking with little to no food or water, Johnny found the tree that bore the fruit and added it to his collection.

Next was finding the waterfalls of Septuple Sec. It was rumored that the waters falling from this cliff rivaled if not bested Cointreau® branded liqueur and that if a man stood in the waters, he would be drunk in less than 10 seconds. Johnny took this as a challenge and found the fabled falls to undertake such a dangerous task. Johnny stood in the Septuple Sec waters for hours collecting the treasured liquid without even turning red. This was a testament to his passion and determination to the perfect margarita.

As for the base liquor tequila, Johnny knew what he had wanted to use from the start, tequila from his hometown in the Costa Rican wetlands. After all the dangerous voyages, Johnny arrived back in his hometown after many years only to be greeted by warm responses and nostalgic faces. Not one person had forgotten who Johnny was or the little kid that he used to be.

So, next time you order a margarita from OTB, be ready to be fascinated with insurmountable quality and effort that was put to create the perfect taste.

If you have ever been to On The Border, you will be no stranger to the amount of pictures and objects hung up on the walls. But did you know the stories behind these so-called “artifacts?” Each one has it’s own unique history and we invite you to discover what secrets lie behind the image. This picture of a chair isn’t any ordinary picture of a chair. The chair is the perch that Individuo Exagerado, first revolutionist of the 1800s, sat on while he pondered the freedom and independence of his people. It is on this specific chair, that Individuo wrote manifestos and war strategies that eventually led to the breaking of rule of oppressive dictators. The chair itself has had stories of excitement and adventure. One time, Individuo had a meeting with other revolutionists, so he left his beloved chair by itself. Enemies of the revolution knew that the chair held significant emotions for Individuo, so they stole it in hopes to crush his ambitions. In the warehouse that they brought the chair to, they administered cruel torture techniques to it so that if Individuo ever saw it again, he would not be able to recognize it. But the chair, as strong as Individuo’s ambitions, survived the tormenting and only ended up with only a single leg bent after all the grueling beating and sawing.

Created from Prosopis Laevigata, or better known as Smooth Mesquite, this chair has stood the test of time and is now forever honored in this humble photo hanging at On The Border.

Born in the midst of the mysterious Costa Rican wetlands. Johnny was born during a dangerous expedition in an attempt to find the much sought after “Golden Fossil,” a metallic bone that was rumored to grant mysterious powers. During the treacherous expedition, Johnny’s mom gave birth to him at the same time a nearby volcano erupted. His parents would forever say that Johnny’s fiery passion came from all the magma that surrounded their camping site for weeks.

Johnny was able to surf before he was able to walk, which says a lot, since he lived nowhere near the ocean. He was however shredding waves that his enthusiastic father artificially created in the family bathtub. When Johnny was finally able to walk, he could successfully complete a “frontside air reverse” in the same little bathtub. Because of this, his parents started bringing little Johnny all around the world with them so that he could enjoy all of the beautiful beaches and most extravagant waves of the world.

During one of his travels with his parents, Johnny befriended a dolphin in the Pacific waters. One morning, there was an incident with a great white shark. Johnny had been surfing at his usual spot when the shark attacked, but luckily for him, he wasn’t alone that day. The dolphin, being quite disturbed by the attempted attack, came immediately to the rescue. After a long, drawn out battle between the two creatures, the brave dolphin slapped the shark on the nose with its large, grey tail, sending the whimpering shark away. After that day, Johnny named her Nosekicker and they became good friends throughout the years.

Johnny was very curious as a child. He managed to get his hands on a bottle of tequila, thinking it was some kind of delicious sugary drink. His father saw this and sat him down saying “Son, it’s time you learn what tequila is.” After that moment, Johnny developed a passion for learning about tequila and trying to perfect the ideal margarita. And that is how Johnny began learning how to bartend. He came to love this exquisite art throughout the years, improving his skills by traveling across the world and studying “mixology,” the science of cocktail creation. In fact, he’s been at the inception of many famous cocktail recipes.

Today, Johnny’s life adventure brings him to San Diego, the city of sunsets, surf, and seafood. He picked up a job where his fascination with people and tequila could be satisfied while he embarked on his next great adventure.

“That’s how I ended up working at On the Border. I’m not interested in the money. I live a very simple life. But the people are fascinating and the tequila is incredible. It marks the beginning of my next great adventure in sunny San Diego.”

Let’s see what the benefits are of some of the most common ingredients found in Mexican food:

Black beans offer many of the benefits of meat, including a high iron content, without the disadvantages of fat. Their fibers regulate both intestinal transit, cholesterol and blood sugar.

Corn contains many trace elements, minerals and vitamins such as vitamin B (which is 2-3 times higher than in the rest of the vegetables), vitamin C, magnesium, zinc or iron. Corn is proving very beneficial to the nervous and muscular balance. This grain is also one the most antioxidant !

Often singled out because of their high fat content, avocados are actually a good source of vitamin E and a powerful antioxidant. The avocado has a a high level of unsaturated fatty acids, that support the proper functioning of the cardiovascular system and blood circulation in the body. It is therefore a much better energy asset than that of most other fresh fruit !

Freshly made tomatillo sauce drizzled over a heaping layer of seasoned pico de gallo and queso fresco is just the beginning of this signature dish that will be sure to blow away “old man winter.” It is also served with perfectly sautéed vegetables and cilantro lime rice, which will certainly “hit the spot.”

Want something even hotter? Go for our Fajita Menu and feel the steam sprout out from the grill to your nose. Our Baja Chicken Fajitas are mesquite-grilled to perfection. So good, that you’ll go look for a dictionary to find out what the true meaning of “mesquite” is. Accompanied by a medley of sautéed vegetables and topped with pico de gallo, freshly sliced avocado and the most incredible and melted-to-perfection Jack cheese, you’ll be sure to say “THAT WAS MUY DELICIOSO!”

Whether you’re a fan of homemade soup or grilled-to-perfection dishes, OTB is the perfect place to forget about that winter gloom, and enjoy a nice, relaxing evening with family and friends. It may be mildly cold outside, so instead of waiting for that San Diego sun to show up, come enjoy something delicious and warm at On the Border.

It’s official. The holidays are here. We know, we know… where did time go? Another year has passed and the holiday feasting is well underway. Oh, the feasts… can’t complain there.

This means it’s time for some real food. Here is a list of a few On The Border holiday favorites:

Looking for a good party in your mouth? The confetti rice salad is calling your name. A medley of black beans, corn, rice and vegetables tossed with lime juice and a spicy hint of Smoked Jalepeno Vinaigrette. Conveniently offered as a party platter, it’s surely going to be a topic of discussion at your next holiday potluck.

Have you tried our amazing sopapillas? Nothing brings the sweetness of the holiday season like our On The Border Sopapillas for dessert. Imagine, a plate of five warm, fluffy Mexican pastries, sprinkled with cinnamon-sugar. Served with honey and chocolate sauce for dipping.

Craving some sizzling, fresh-out-of-the-pan, chicken or steak ready for you to dive your forks into? Give this a try. Our Monterey Ranch Chicken Fajita, which is topped with crispy bacon crumbles, pepper Jack cheese and creamy Ranch dressing… or our Smothered Steak Fajita which is loaded with sautéed mushrooms and onions, melted cheddar and pepper Jack cheese! (Wow, now I am getting hungry writing about this!)

Feel like keeping it simple? You can never go wrong with the Classic Burrito here at On The Border. You have a choice between shredded or ground beef, slow-cooked pulled chicken or roasted pork. We’ll have to warn you: It can be a tough decision–but you can rest assured that no matter what you decide, you will be happy with! Yes–it’s that good. Along with whichever you decide, you will have pico de gallo and cheese topped with choice of red chile sauce, fresh sour cream sauce, queso, or ranchero sauce! Can you say “yum”?

Can’t decide between a burrito or a fajita? Why not have both with The Big Bordurrito, which is a fusion of our fajita chicken or steak, AND burrito! Imagine, your choice of fajita steak or chicken, Mexican rice, cheese, black beans, caramelized onion and red peppers, and sour cream sauce, served with a side salad. Perfect way to get the best of both worlds!

If you haven’t tried any of these delicious plates, you still have time to try them all out before the New Year! Treat your friends and family to the best holiday gift ever and bring these festive dishes to your next holiday party.
